Jenny Miso Ramen

(Hair frizzles like in a Ghibli movie) Who's excited to make Jenny ramen??


Jenny Miso Ramen

Makes One Serving

Cook time: 20-30 mins


Ingredients:


– 2 Servings of Gluten Free Noodles

– 2 cloves of garlic – minced

– 1/4 tsp ginger – minced

– some green leafy goodness! (my fav is two heads of baby bok choy)

– 1/2 cup of pasta water

– 1/2 cup of vegetable broth

– 2 tbs soy sauce

– 2 tbs white miso paste

– 2 tsp sesame oil

– 1 tsp chili oil (optional, but highly recommended!)


Directions:


– Cook noodles according to packaging instructions, drain, and set aside

**KEEP 1/2 CUP OF PASTA WATER!!!**


– in the same pot you used for the noods, heat 1 tsp of sesame oil over medium heat


– once the oil is heated, add the minced garlic and ginger and cook until fragrant, around 1 min, then add the green veg and cook until wilted

**if you're really pressed on time, you can skip the ginger and garlic, it'll

save you time on chopping and sautéing!


– once the greens are cooked through, add pasta water, vegetable broth, and soy sauce and allow the broth to reach a boil, then simmer for a couple of minutes, like 2-3


–after simmering and mixing those good flavors, remove the broth from the heat and add miso paste, remaining 1 tsp of sesame oil, and chili oil (optional)

*side note – Japanese people don't boil miso, so neither do I!


– get those noods into a bowl where they belong, add the broth and veg mix and enjoy!

Comin at you live with a fresh new super flexible recipe. Jenny ramen is any ramen that I make. It can be super dolled up and fancy or super barebones and it will always taste delicious. That's a Jenny guarantee.


This recipe is for my basic Jenny ramen broth. Here is a link to the hype beast broth.


Jenny ramen is dope because it is compatible a ton of different noods. Noods I've used in the past and will no doubt use in the future are:

– brown or white rice noodles of any and all widths

(I really like Erawan Brand, whose noodles conveniently come in size S, M, + L)

– Korean purple sweet potato noodles (as seen in my pad thai recipe)


**Remember, it's fun to experiment with new ingredients, and even more fun

to shop locally!! Support your local specialty grocery store!


Jenny ramen is also compatible with literally any vegetable you have in the fridge –just throw 'em in there – but none more so than MUSHROOMS *chefs kiss* My favs are:

shiitake mushrooms (you can buy these bad boys dried)

– good old baby 'bellas

You legit can't go wrong.


Some fantastic garnishes that I would also recommend are:

Shichimi Togarashi (Japanese seven spice blend)

– sesame seeds

– more chili oil, always

These Noods feature adult bok choy – also referred to as just bok choy – and mung bean vermicelli noodles.
