Two recipes in one day?? How lucky are you guys??
Finally a Korean recipe, amiright?
Will somebody let me know what that says?
Jenny Japchae
Makes 2 Servings
Prep Time: 15-20 mins
Cook Time: 15 mins
Total Time: 30-35 mins
Ingredients:
2 servings of Korean sweet potato noodles (approx. 100 g if that helps lol)
1 tsp of cooking oil (olive, avocado, canola)
1/2 yellow onion (thin rounds)
2 pinches of salt
1 carrot (either peeled or julienned – cut into matchsticks)
1/4 bell pepper (julienned)
1/2 cup shiitake mushroom (thinly sliced)
1 tsp garlic (minced)
2 cups of baby spinach, rinsed
1/4 cup of tofu skin (thinly sliced) (also known as dried bean curd)
2 tbs soy sauce
1 tbs of something sweet (maple syrup, honey, or brown sugar)
1 tsp sesame oil
1 tsp chili oil (optional, but recommended)
sprinkling of sesame seeds (optional, but recommended)
Directions:
Prep all your veggies
Cook noods according to packaging instructions, drain drizzle with a lil oil and salt, and set aside. If they're super long, cut them with some scissors.
Heat cooking oil over medium to high heat. Add onion and a pinch of salt and sauté until begins to soften, about 5 mins. Add carrot, pepper, mushroom, garlic, and another pinch of salt and continue to sauté until they begin to soften too, about another 5 mins.
Once veggies are softened (but not super mushy!), add spinach, tofu skin, noodles, soy sauce, sweetener, sesame oil, and chili oil and keep sautéing for another minute or so, to combine all those juices!
Sprinkle with sesame seeds to finish.
Serve hot or cold and enjoy!
Notes
Traditional japchae is made with marinaded beef and egg, so we're just skipping the beef and using tofu skin instead! Saves money and a cow named Daisy. Win-win!
I wish I had a pic for you guys but I ate it too fast. As my roommate described it, "definitely a repeat recipe!" So I'll post one soon.
